Sarraz was founded by the lords of Grandson. In 1049 Adalbert de Grandson decided to build a fort on the rock which dominated the salt route. The rock belonged to the Abbey of Romainmôtier who, furious, complained to the pope, but unsuccessfully because Adalbert kept the rock and built his tower. The village was transformed in the middle of 13th Century when it became a fortified community. Set on fire during the Burgundy Wars and again during the Reformation, attacked during the revolution and again during the Feudal wars, the Castle of Sarraz survived to the present day. It is currently undergoing restoration.
