The first written reference to the world famous Gruyère cheese was in 1115, when Count Guillaume de Gruyère established a tax on local cheese. It became known by name in 1602, when given as a gift by the Fribourg government. A visit to La Maison du Gruyère, adjacent to the railway station, starts with a multi-lingual headset and you experience the whole manufacturing process, the skills of which have been handed down from generation to generation. The dairy has four 4,800 litre vats and its cellar can mature up to 7,000 wheels of cheese. There is a large restaurant serving regional dishes.
